Phenolic compounds are a wide range of components found in many plant-derived foods. They work as terminators of free radicals credited to their super antioxidation power.

They are also antimicrobials, help in prevention of cardiovascular diseases, cancer, infection and degenerative diseases.
Phenolics are readily oxidized and this causes bitter taste, loss of nutritional value and reactivity with other components.

Microencapsulation protects these compounds form oxidation, loss of nutritional value and stops reactivity with other substances. It also helps in extending its shelf life and increases its bioavailability.

Microencapsulated phenolics can be used in baked goods, juices and packaging of fresh foods as a bio-preservative.
